Angel food


Before the introduction of freezers and refrigeration this little dish was a common way to enjoy a creamy dessert.

I remember my grandmother serving it as a weekend dessert in the autumn when the jam had been made.

We opened a jar of blueberry jam the other week, to eat with our waffles, for waffle day, and as I don’t add any preservatives to my jam it doesn’t last very long after the jar has been unsealed. I decided to finish it off by making angel food for our dessert today.

Servings 4 portions


  • 100 ml cream
  • 100 ml jam
  • 100 ml biscuits crushed


  • Beat the cream to hard foam.
  • Fold in jam and crushed biscuits.
  • Serve.


For this recipe I used the oat biscuits I posted last week.
