Tea and treat
Grandmother Anna always had an assortment of biscuits and sweet breads in store, for when guests arrived unexpectedly or as treat with afternoon coffee. We very rarely get unexpected visitors, but we still like to have a treat with our evening tea.
Oat biscuits are excellent to have in the cookie jar. Not too sweet, yet lovely to have with your evening cuppa. The oat crisps are sweeter, and so quick to make that if someone calls you to announce they’ll be with you in half an hour you’ll have freshly baked biscuits to serve with a cup of coffee.
I tend to do a batch of both when I bake. Starting with the biscuits so the dough can rest in a cool place whilst I make and bake the crisps. From start to finish about an hour.
Oat crisps
Ingredients
- 75 g butter
- 100 ml caster sugar
- 100 ml rolled oats
- 100 ml flour
- 20 ml milk
- 20 ml treacle
- 5 ml ground ginger
- 3 ml baking powder
Instructions
- Heat the oven to 200 ° C.
- In a saucepan melt the butter. Remove the pan from the plate. Stir in sugar, oatmeal, wheat flour, milk, treacle, ginger and baking powder to make a smooth batter.
- Scoop out the batter, about 1 tbsp to each crisp, with a fairly large distance on a sheet of parchment paper, as the batter floats out when the crisps are baked.
- Bake the crisps in the middle of the oven at 200 ° C for about 5 minutes or until they have a nice golden colour. In a fan assisted oven 175 ° C for about 8 minutes.
- Let the crisps cool on the plate for a few minutes before moving them to a rack to cool completely.
Oat biscuits
Ingredients
- 200 g butter room temperature
- 100 ml sugar
- 350 ml oatmeal
- 275 ml flour
- 20 ml baking powder
- 20 ml vanilla extract
- 100 ml raisins optional
Instructions
- Heat the oven to 175 C.
- Mix butter and sugar to a smooth paste.
- Mix in oatmeal, baking powder and wheat flour to a smooth dough.
- Form small balls of a tablespoon of dough each and flatten them a little with a fork.
- Place the oatmeal cookies on two plates with parchment paper.
- Bake in the middle of the oven for about 10-15 minutes until the biscuits have a nice golden colour.
- Let the biscuits cool on the plate before serving. Store in an airtight jar or freeze.
