A creamy delight.
Ostkaka is an old dish that has been eaten since, at leaset, medieval times. It’s mentioned in the literature in the 16th century, but most likely it’s been eaten formuch longer than that.
Traditionally this is made with cream and rennet, but fortunately these days we have access to Cottage Cheese in the supermarkets, making ostkaka a much easierdish to make.
Ostkaka - Swedish cheesecake
Ingredients
- 500 g cottage cheese
- 4 eggs
- 100 ml almond flour or ground almonds
- 300 ml cream
- 1-2 tbsp granulated sugar depending on how sweet you want it
- 30 g flour
- salt a pinch of
Instructions
- Beat the sugar and eggs, then add the rest of the ingredients and stir well.
- Pour the mixture into a greased ovenproof dish.
- Bake in 175 degrees Celcius (350 F) until solid, 35-45 minutes. It should have the consistency of quiche.
Notes
Serve with a dollop of whipped cream and a good jam.
