Best chops ever!
A while back I came across a recipe for a sauce containing teriyaki sauce and I really enjoyed it so tried baking pork chops in the oven with it. Personally I really do recommend it. A huge amount of flavour with very little work.
I used pork chops for this recipe and though I would usually brown them in a frying pan first, these ones go in uncooked.
The mushrooms I use in my recipe I’ve foraged myself, but any you can buy will be delicious. Here served with Grandmother Anna’s cucumber salad and pizzasalad

Ingredients
- 4 chops
Topping
- butter for frying
- 2 shallots finely chopped
- 2 garlic cloves finely chopped
- 200 g mushrooms chopped
Sauce
- 200 ml water
- 200 ml cream
- 75 ml teriyaki sauce
- 1 chicken stock cube
- pinch of chili powder
- soy sauce
- salt and pepper to taste
- corn starch
Instructions
- Heat the oven to 175 degrees.
- Peel and chop the onion and garlic. Chop the mushrooms.
- Place the chops in an ovenproof dish.
- Fry onions, mushrooms and garlic. Place over the meat.
- Pour water, cream and teriyaki sauce into a saucepan. Bring to the boil while stirring.
- Add stock cube, chili powder, soy, salt and pepper. Thicken with corn starch to desired consistency.
- Pour the sauce over the chops and cook in the middle of the oven for about 1.5 hours.
Notes
I use wild mushrooms in mine, but any tinned or fresh you find in your shop will do.
