
A little drop of heaven
This is not quite your ordinary strawberry jam. Balsamic vinegar deepens the flavour of the berries, rosemary adds a subtle savoury note, and freshly ground black pepper gives it just enough warmth without making the jam taste peppery.
It is wonderful on toast and freshly baked bread, but don’t stop there. Serve it with cheese, spoon it alongside a cheeseboard, or use it wherever you want something sweet with a little more character.

Strawberry, Balsamic & Rosemary Jam
Sweet strawberries, tangy balsamic, fragrant rosemary and a little black pepper turn a simple summer jam into something rather special.
Ingredients
- 1 kg 2.2 lb strawberries
- 500 g 1.1 lb jam sugar with added pectin
- 100 ml ⅓ cup + 1 tbsp dark balsamic vinegar
- 2 tbsp honey
- 1 small sprig fresh rosemary
- 1 tsp coarsely ground black pepper
Instructions
- Hull the strawberries and cut larger berries into pieces.
- Put the strawberries, jam sugar, balsamic vinegar, honey and rosemary sprig into a large saucepan.
- Bring to the boil, stirring gently until the sugar has dissolved.
- Boil for 5–8 minutes, stirring occasionally and skimming off any foam if necessary.
- Remove the rosemary sprig.
- Stir in the coarsely ground black pepper towards the end of the cooking time.
- Pour immediately into clean, hot sterilised jars and seal.
Notes
The rosemary should complement the strawberries rather than dominate them, so use a small sprig and remove it before filling the jars.
Use black pepper here rather than white pepper. Its warm, aromatic flavour is part of the recipe and works particularly well with strawberries and balsamic vinegar.
