Quick and simple

A Swedish oven pancake is pretty much just a giant Yorkshire pudding, but we eat it as a meal in itself rather than an accompliment.

It can be made as a savoury dish by adding pork, in which case it’s known as a pork pancake, but this is a basic recipe.

Basic oven pancake

This is the basic recipe for a Swedish oven pancake.

Ingredients
  

  • 130 g flour
  • 1 tsp salt
  • 60 cl full fat milk
  • 3 eggs
  • 20 g butter melted and cooled

Instructions
 

  • Pre-heat the oven to 220. 425 F or gas mark 7
  • Mix flour and salt in a bowl. Add the melted butter, the eggs and half of the milk and beat until smooth. Gradually add the remaining milk and carry on beating until the mix is completely smooth and lump free.

  • Grease a roasting tray, roughly 20x30 cm.
  • Pour the batter into the tray and bake in the oven for about 30 minutes until the pancake has puffed up and browned.

Notes

Serve with jam, and maybe a dollop of cream if served as dessert.
