Baking has been part of Swedish home cooking for centuries, shaped by the grains that could be grown, the seasons and the practical need to make bread last. Rye, barley and later wheat became everything from sturdy everyday loaves and crispbread to soft rolls and flatbreads, with recipes varying from one part of the country to another.

But Swedish baking is not only about bread. Buns, biscuits and cakes are at the heart of fika, while many older recipes were reserved for holidays and special occasions, when precious ingredients such as butter, sugar, eggs and spices could be used a little more generously.
