600gsalt beefshredded (you may know it as salt brisket or corned beef)
5cornswhite pepper
3cornsallspice
1bayleaf
beef stockto just cover
3tbspbutter
Instructions
Put potatoes and shredded salt beef in a saucepan. Pour in beefstock to just cover. Add the pepper corns, allspice and bayleaf.
Bring to the boil and let simmer until the potatoes are soft.
Remove the spices.
With a potato masher, or fork, mash the potatoes in the stock. Add the butter and blend it all together.
Notes
Serve with pickled beetroot. If you don't have access to salt beef (corned beef or brisket) you can use a tin of corned beef, but then you should wait with adding it to the potatoes until they have been cooked and mashed.
